Colleen hails from California, where she spent the better part of two decades working in the fast paced restaurant industry on the West Coast before moving East to open her own restaurant in Black Mountain, North Carolina.  After five years running her own restaurant, Colleen transitioned into the role of Food Service Director for a regional therapeutic boarding school, before joining the faculty at the Academy.  Affectionately known as “Ms. Coe” by the Academy student body, Colleen’s kitchen is the heart of the Academy campus, where she teaches Wellness & Culinary Arts courses, collaboratively prepares meals with students for the entire learning community, and instills students with a warm sense of belonging.  When not at the Academy, Colleen enjoys spending time in the outdoors with her husband and son, exploring all that western North Carolina has to offer.
